This is a family favorite in our home. My mom came up with this recipe, and in my opinion it will be the best cake you'll ever eat. It's pretty simple to make as well. Here are the goods:
1 chocolate cake mix
1 lg jar of marciano cherries
1 8 oz container of cool whip
1 small box chocolate pudding
1 1/2 C milk
Drain the cherries and set aside juice for cake mix. Finely chop all the cherries. Make your cake mix according to the directions and add half of the chopped cherries and cherry juice with the water. (If the recipe calls for 1/2 C water, and you have 1/4 C cherry juice, all you need if 1/4 C water.) Bake in three 8 inch cake pans greased and lined with parchment paper. Once baked and cooled, wrap in plastic wrap and freeze overnight. ( Freezing your cakes overnight always makes them more moist.) A few hours before serving, assemble your cake. Make pudding with 1 1/2 C milk, then put in fridge for 10 minutes to obtain a thicker consistency. Layer your cake with pudding in between each layer. Add remaining chopped cherries and one drop of pink food dye to cool whip. Frost entire cake. Chocolate shavings and a cherry on top make a great presentation!
